Observation: 1. Bleach sanitizer not available at start of inspection
**Corrected during inspection** Sanitizer mixed when requested. Measured 100ppm bleach.
Please have available whenever in operation. Ensure all staff know how to properly mix sanitizer solution.

2. High temperature dishwasher measured ~54.6°C after 4 cycles.
Corrective Action(s): 2. Contact plumber/technician to have unit serviced. Dishwasher needs to reach 72°C at plate surface (81°C at nozzle). In meantime, facility is to switch to manual dishwashing method. Three compartment sink is to be used for the following:
- Wash: with soap
- Rinse: with clean, potable water
- Sanitize: use 100-200ppm bleach sanitizer solution (1/2 tsp household unscented bleach : 1L water). Soak equipment for 30 seconds and let air dry.

Observation: Droppings observed in the following areas:
- Corner of dishwasher room, under wire shelving
- Dry storage, under shelving
- Near back exit.
Operator stated staff observed a mouse running into dry storage. Lost sight.
Corrective Action(s): 1. Work with pest control company to develop integrated pest control plan.
2. Recommended to declutter dry storage area (and have shelving raised a little more, ~6inches off floor, to make cleaning easier.
3. Recommended to ask if landlord can relocate dumpster as it is located ~1 - 1.5 m from back door.
4. Recommended to remove garbage from storage floor more frequently, as it can potentially be a pest attractant (food and nesting material)
