Observation (CORRECTED DURING INSPECTION): Found sushi fish being cut on cardboard.
Corrective Action(s): Cardboard is not an easily cleanable or sanitary surface, do not use cardboard as a cutting board as it can be covered in dirty or bacteria from the outside or floor which can contaminate food.

Observation (CORRECTED DURING INSPECTION): 1.Found a large container of Japanese mayonnaise sitting out at room temperature, internal temperature was 7C.
2. Upright glass cooler was 7C, had eggs, scallops and crab.
Corrective Action(s): 1. Must keep potentially hazardous foods in the cooler below 4 C. Portion out small amounts to keep in sushi prep cooler and large container is to be kept in cooler, refill as necessary.
2. Move potentially hazardous items to working cooler, until unit can maintain 4 C or colder at all times.

Observation: 1. Found sushi fish to be laying flat on the floor on a plastic liner and cardboard.
2. Found multiple containers stored in the cooler/freezer with out proper covers.
Corrective Action(s): 1. No food must be stored on the floor. Keep sushi fish in the Styrofoam container while preparing to prevent from being contaminated.
2. Must ensure all food is covered when put away in cooler or freezer.

-No signs of pest activity noted at time of inspection
NOTE: found multiple single use gloves lying around after use. Gloves are to go into the garbage after use, hands rewashed and new gloves put on.
