Observation (CORRECTED DURING INSPECTION): Accumulation of food debris observed on and around blade of deli slicer.
Corrective Action(s): Ensure that deli slicer is taken apart and components are properly cleaned and sanitized. Please ensure that this is done after each use to limit the potential for cross contamination. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): 1. No sanitizer available for main prep line.
2. Bucket of sanitizer in server area measured at 50 ppm chlorine.
Corrective Action(s): "Suma Diversol" sanitizer was prepared for both areas and measured 100 ppm chlorine. Please follow manufacturer's directions (3 grams of product per one litre of water for a 100 ppm solution).

Observation (CORRECTED DURING INSPECTION): 1. One package of food found thawing under running water in kitchen hand sink.
2. Maple syrup dispensers stored in server hand sink.
Corrective Action(s): Package of food moved to prep sink to thaw under cold running water. Syrup dispensers were removed. Please ensure that hand washing sinks remain unobstructed at all times as they are intended for hand washing only.

Corrective Action(s): Knife was put through the dishwasher during inspection. Please ensure that knives are not stored in this space as it cannot be adequately cleaned and sanitized. Knife holder available.

304 - Premises not free of pests [s. 26(a)]
Observation: Dry rodent droppings observed along floor to wall junctions to left of kitchen hand sink and below storage rack.
Corrective Action(s): Please ensure that the above-noted areas are properly cleaned and sanitized. Wipe away droppings with a damp cloth or paper towel. Do not sweep or vacuum. Dispose in a plastic garbage bag. After cleaning, apply a 1:10 bleach solution to all affected surfaces. Date to be corrected by: Today.

Note: Please ensure that hard to reach areas, including floor to wall junctions, are being cleaned. Ensure that cracked or missing tiles are repaired to limit accumulation of food debris. - Walk in cooler at 4 degrees C. Food is stored safely.
- Sandwich cooler at 3 degrees C (below) and 3 to 4 degrees C (above)
- Saute cooler at 3 degrees C (below) and 4 to 5 degrees C (above)
- Walk in freezer at -14 degrees C.
- Fry (reach in) freezer at -10 degrees C.
- Low temperature dishwasher measured 50 ppm chlorine in rinse residual at utensil surface.

Server Line:
- Server cooler at 2 degrees C (above) and 2 degrees C (below).
- Dessert cooler at 4 degrees C.
- Juice cooler at 3 degrees C.
- Ice cream freezer at -8 degrees C. Dipper well functional.
- Ice machine in clean condition. Scoop stored safely.

- Hot holding internal temperatures at greater than 60 degrees C (minimum 60 degrees C)
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Temperature records maintained and available for review.
- FOODSAFE requirements met at time of inspection.
- Premises is serviced by a professional pest control operator. Last report dated July 13, 2017. Please ensure that all recommendations are followed to further reduce any pest activity. Additional tin can and snap traps were set--no activity noted at time of inspection.
