304 - Premises not free of pests [s. 26(a)]
Observation: Significant volume of flies noted in server and kitchen areas of concession. Main door to outside open all the time. Bar service counter open all the time. Noted two light traps, one on either side of concession appear to be doing little to control fly entry.
Corrective Action(s): Doors/windows must be kept closed to keep flies out. Place directional fans pointed towards entry points will help reduce volume of flies entering concession. Fly sticky traps not appropriate for use in and around food prep storage areas during hours of operation.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Floors walls and ceiling near exhaust and air intake observed with accumulations of food debris or greasy dust potentially contaminating food or attracting pests which could contaminate food. Also, shelves noted with build up of dust. This indicates scheduled and systematic cleaning of facility is not being consistantly performed.
Corrective Action(s): Clean kitchen more regularly such that accumulations of food debris etc. as noted above don't accumulate. Review sanitation plan, add checklists for cleaning to help address this issue.

Freezer ok.
Outside service area clean and equipped with handwash station ice machine and sanitizer measuring 200 + ppm quats.
Dishwasher low temp. at 50 to 100 ppm
hanwash stations all stocked with liquid soap and paper towels.
Sanitizer spray bottles in good supply and at 200 ppm.
Server area pretty clean and well organized.
