Observation (CORRECTED DURING INSPECTION): Glasswasher closest to the front door was found to be operating with 0 ppm iodine at the glass surface.
Corrective Action(s): Dirty glassware moved to working glasswasher near the back of the bar. Ensure that all dishware is appropriately cleaned and sanitized

Observation: Glasswasher closest to the front door was found to be operating with 0 ppm iodine at the glass surface. Sanitizer pump was not operational when priming button wash engaged
Corrective Action(s): Do not use this glasswasher until it has been repaired and capable of sanitizing dishware at 12-25 ppm iodine.

=Kitchen and bar handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (2C) and all other coolers measured < 4 degrees C
=Walk-in freezer (-14C) and undercounter freezer (-27C)
=Soup hot holding not available and hot line hot holding (gravy 80C, stew 79C) measured > 60 degrees C
=Low temperature dishwasher measured 100 ppm chlorine at the dish surface
=Low temperature glasswashers (1 of 3) measured ~25 ppm iodine at the glass surface. Upstairs glasswasher to be tested in next inspection as it was fully disassembled and not operational at the time of inspection. Secondary glasswasher noted in above violation measuring 0 ppm iodine at the glass surface.
=Wiping cloths stored in sanitizer solution at 200 ppm QUATS and available in spray bottles, lactic acid sanitizer is no longer being used on site.
=Dedicated prep sink available for food preparation
=General sanitation was satisfactory at the time of inspection
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
=No evidence of pest activity noted at the time of inspection
=Ice machine and deli slicer were maintained in a sanitary manner
=Staff hygiene satisfactory at the time of inspection; Kitchen manager FOODSAFE certification valid to Feb 2027.
