Observation: Walk-in cooler floor in parts needs cleaning. Target puddles of stagnant water. Remove wood slats from shelves that are not cleanable. Significant ice build up in walk-in cooler #1
Some areas of main processing floor observed with puddles.
Corrective Action(s): Clean up as discussed. make sure all areas where water puddles are dry-mopped at the end of cleaning to ensure water doesn't build-up. Defrost cooler unit #1 and perform a thorough clean-up.

Plastic shelves in main processing area unstable and the area around is disorganized. Recommend replacement. Anchor to wall as these shelves are unsafe. Move these shelves to determine rodent access and movement. Observed a rat dropping in this area, but not in any other areas. Make sure to address any rodent or pest activity.

Lighting in coolers needs improvement.

Floor drain is full with water (wastewater). Operator states it is slow to drain to sewage disposal field.
**Make sure to assess and unplug or improve water movement out of floor drain as discussed. Best tackled in the summer and may require qualified septic installer to assess.
**Floor tiles broken in places in processing and receiving areas. Fill in smooth to floor level as discussed.

New sanitizer product to be used. 3 in 1. Verify its safety for food environment.

Sanitizer (bleach) measured above test strip capabilities. Bleached out strips. Devise a system to ensure solution is between 100 to 200 ppm at all times.
Handsink in processing room to be fixed. Use double sink as temporary handsink - send pics when fixed. Fix ASAP.
