304 - Premises not free of pests [s. 26(a)]
Observation:
There are fuit and drain flies in the kitchen and bar area. There are many conditions that promote the breeding of these pests.
Corrective Action(s):
Increase the cleaning frequency of hard to reach areas and those areas mentioned in this report. Find all leaks and fix them to stop the pooling water. Contract a professional pest company to eliminate the flies, and follow all recommendations made by the pest technician. Remind staff that, all surfaces MUST be cleaned with hot water and soap, and then sanitized with bleach or Quats at the end of the day (this includes the bar area too).

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
There is pooling water on the floor under the kitchen prep tables (across from the dishwasher); on the floor by the dry storage door frame; and on the floor around the grease interceptor lid. Pooling water ceates an environment for flies to breed.
Corrective Action(s):
Mop up the pooling water and find the source of the water to prevent it from pooling. Repair any damaged or leaking pipes or drains.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Food debris and pooling water found on the floor and walls beneath and below prep tables and equipment. This will attract and breed flies.
Corrective Action(s):
Clean these areas with hot water and soap, and then spray with sanitizer at the end of EACH day. Cleaning from the floor and up to 4 feet on walls is needed more frequently (undersides of prep tables & sinks; legs of equipment & tables; lower shelves of prep tables; etc.).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The interior door of the microwave is peeling off. Pieces of this plastic could get into food, and/or it could pose a safety issue to staff.
2) The faucet by the salad station continuously drips and is not secured to the wall/sink. When there is a constant source of water, flies will breed in moist environments.
Corrective Action(s):
1) Immediately stop using the microwave and replace it with one that is intact and in working order.
2) Repair or replace the faucet so that it can be fully turned off and on with the taps. Secure the faucet to the wall or sink to prevent further damage.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
1) Found holes in walls (beneath the dishwasher and prep tables), and tiles that have fallen off walls (around the dishwasher and outside the dry storage room). This makes it difficult to clean these surfaces and allows an entry site for pests.
2) There is water leaking and it is pooling around the prep tables and grease interceptor lid. This is creating a problem with flies and is a slipping hazard for staff.
Corrective Action(s):
1) Repair the holes so the walls are smooth, sealed, durable, and cleanable. Repair/replace the tiles that have fallen off the wall.

2) Find the problem and repair it, so water no longer pools and creates an environment for flies to breed.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -21C; hot holding units above 60C; thermometers present; and temperatures monitored daily.
- Low temperature dishwasher had a [Cl2] of 100ppm during the rinse cycle.
- Glasswasher had a [I2] of 12.5ppm during the rinse cycle.
- Quats sanitizer in spray bottles and utensil bins was 200ppm, and bleach sanitizer in spray bottles had [Cl2] above 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups with raw proteins separate from RTE foods; and stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is adequate but improvement needed in the mentioned areas. Sanitation level has decreased since the last inspection. It is recommended that the premises is inspected to ensure cleaning is being done correctly.
- FoodSafe certified staff present.
- The walk-in-freezer door seal has been replaced. No more ice has built up.
- The floor tiles in front of the deep fryer have been replaces. They are smooth, sealed, and cleanable.
