Observation (CORRECTED DURING INSPECTION): Bottle of QUATS sanitizer at front-of-house measured at 0ppm.
Corrective action: Sanitizer was replenished at time of inspection and was measured at 200ppm. Ensure that you routinely check and replenish your sanitizers to properly sanitize food contact surfaces.

Comments

Routine inspection conducted. The following observations were noted:

1. Temperatures
-Walk-in cooler at 2C.
-Prep cooler (top) at 3C and bottom at 3C.
-Beverage cooler at 2C.
-Coolers equipped with digital readout thermometers.
-NOTE: Temperature logs and sanitizer logs have NOT been taken since the end of November. It is essential that logs be maintained daily.

2. Hygiene and Sanitizing
-Handwash station stocked with hot/cold running water, liquid soap, and single-use paper towels.
-Sanitizer dispenser releases QUATS at 200PPM.
-Drain plugs available in 3-Compartment sink. Staff aware of how to use QUATS test strips - these MUST be used daily.
-Knives and equipment generally maintained in good sanitary condition.
-Pizza trays stored in good sanitary condition at back of house.

3. Storage
-All items covered when not in use and appropriately labelled with "use-by" date.
-6" clearance present for all food products.
-Chemicals stored separately from food preparation areas.

4. Pest Control
-Premise employs professional pest control company to conduct monthly checks for pests.
-No recent, visible signs of pest activity noted in premise.
-No rodents observed inside traps 71 thru 77. All traps adequately equipped with sticky pads.

5. Administrative
-Staff members have Foodsafe 1/equivalent.
-Permit posted and up-to-date.
