Correction: Service/repair kitchen prep line - Maintain at or below 4 C. Temperature gauge is required to be kept inside prep line for temperature monitoring.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food contact surfaces/implements are not being washed/sanitized after use.
Correction: All food contact surfaces are required to be washed/sanitized. All items are required to be stored in a sanitary manner - shelving. (storage racks), in order to prevent post contamination. Wiping cloths are required to be stored in a sanitizer at all times.

Observation: No single use towels noted at handsink.
Correction: Provide single use towels in kitchen prep area.
Comments

Re-inspection based on previous Inspection Report #CB9T4A.
- Temperature Control: Kitchen Prep cooler: 2.6 C. Refrigeration unit cleaned, inserts are fully filled, temperature gauge is noted inside the refrigeration unit for temperature monitoring.
- Food Storage: Improved. Ensuree all food/ingredients are being stored in covered, food grade containers. No implements are permitted to be stored inside the containers.
- Manual Dishwashing: Three Step Method. SIgnage provided. Bleach noted on site. Staff have been trained on the required amount of bleach concentration per water mixture.
- Sanitation: Great improvement. A cleaning schedule is to be established for this facility. Ensure routine a cleaning of "hard to reach" items (ie: Behind/under equipment) is being conducted.
- Chemical Storage: Improved.
- Handwash Station: Ok.
- FoodSafe trained staff are noted on site. FoodSafe training certificates are to be kept on site for reference.
- FoodSafety Plan: Generic template and corrective action provided. Danger Zone signage provided.

Facility is required to be kept clean and organized at all times, store all items in designated areas. Ensure Foodsafety/Sanitation procedures are being followed.
- Clean/organize storage shelving.
- Continue efforts to clean wall panels/storage shelves, prior to next routine inspection.

As per City of Delta Fire Safety Liaison discussed this date - storage and use of portable propane tanks/burners are not permitted to be used indoors!
ALL staff are required to be properly trained!
