Observation (CORRECTED DURING INSPECTION): One bottle of quats sanitizer measured 100 ppm quats.
Corrective Action(s): Sanitizer bottle emptied and refilled at dispenser, then tested and measured 200 ppm quats. Ensure that sanitizer is always available at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats).

Routine inspection conducted:

- Walk in cooler at 2 degrees C
- Assembly cooler at 3 degrees C (above) and 2 degree C (below)
- Beverage coolers at 2 to 3 degrees C
- Cook line drawers at 3 degrees C
- Walk in freezer at -19 degrees C
- Fry freezer at -7 degrees C. Fry cooler in frequent use at time of inspection--monitor and adjust as needed to maintain -18 degrees C or less.
- Hot holding internal temperatures measured at 60 degrees C or more (Alto Shams and counter top unit)
- Thermometers available for all cold holding units. A probe thermometer is available on site for internal temperature checks.
- Food is protected from contamination. Scoops stored safely with handles outside of food. Raw meats and eggs are not stored above ready-to-eat foods.
- Hand washing stations (front, back) are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quaternary ammonium compounds (quats) sanitizer is available from dispenser and spray bottles (front, back) at 200 ppm. Quats test strips on site.
- Low temperature dishwasher measured 54 degrees C and 100 ppm chlorine in rinse residual at utensil surface. Chlorine test strips on site.
- Utensils and equipment maintained in sanitary condition
- No signs of pest activity observed
- Washrooms maintained in sanitary condition
- FOODSAFE requirements met at time of inspection. FOODSAFE equivalent certificate is valid until 2021.
- Temperature and sanitation logs are well maintained and up to date
