The new commercial ("Lambert" brand) washer has been installed -at plate temperature measured at 79 deg C at plate level for the first cycle Operator may resume the use of reusable ware. Ensure you are daily temperature checking the washer for rinse (>82deg C/180deg F) on a daily basis along with your fridge temperatures
