Observation (CORRECTED DURING INSPECTION): Two large pizzas (16 slices) displayed in the case had internal temperatures measured at 25-26'C. All discarded at this time.
Corrective Action(s): Facility was NEVER approved to sell pizzas by slice unless a new hot-holding unit was obtained. Repeated violation in future will result in further enforcement action(s) - issuance of Correction Order/Violation Ticket(s).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach bucket had a bit of bleach only- no water mixed in. When asked, staff did not know how much water was to be added to prepare the correct concentration. 200ppm chlorine was prepared in the bucket at this time.
Corrective Action(s): Ensure two buckets of 200ppm chlorine solution are prepared for kitchen/back prep area, as discussed/agreed during the initial inspection.

Observation: It was found during the initial inspection conducted on July , 2019, that operator's Foodsafe Level 1 had already expired. Operator was to register for the course and notify the health inspector. Nothing was received by the health inspector as of today.
Corrective Action(s): Every operator of the Food Service Establishment MUST be Foodsafe Level 1 certified. Ensure to retake the course and send the certificate to the health inspector.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer operating below required temperature of -18'C.
-Thermometers available for temperature monitoring system.
-General food storage practice satisfactory.
-3 compartment sink properly equipped for manual dishwashing. Bleach available.
-Washroom handsink satisfactory.
-No evidence of pest activity observed at this time. Back area satisfactory.

NOTE: Prep cooler had ambient air temperature ranging in between 7-8'C due to opening/closing during lunch shift. Temperature knob was adjusted at this time.
Ensure the temperature of prep cooler comes below 4'C within the next hour. If not adjust again and/or call for a service.
NOTE: Dough mixer to be cleaned today. OK.

Please contact the health inspector for any questions or concerns. Follow-up inspection to ensure compliance will be conducted in the next couple months.
