Fruit cutting does not require a permit.
Recommend moving fruit cutting program back to produce area.
Alternatively fruit can be cut and portioned in the deli, but dishwashing sinks should not be used for produce prep as this is preventing proper dishwashing.
Knives may be washed in commercial dishwasher or in deli at 3 compartment sink.
Hand sink for produce area or one compartment sink by dishwasher can be used for handwashing.
