302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher registered 63C at the plate level after the final rinse cycle. After running the dishwasher for 10 times, the final rinse temperature increased to 71C at the plate level.
2. The iodine bottle for the glass washer was empty. After switching out to a full bottle, the iodine sanitizer concentration still measured at 0 ppm.
3. 100 ppm quats measured from the sanitizing dispenser.
Corrective Action(s): 1 & 2. Dishwasher and glass washer was serviced at the time of inspection. Ensure all the utensils are washed and sanitized before use.
3. Manually dilute the stock quats into 200 ppm quats solution. Clean and sanitize all food contact surfaces. Corrected during inspection.

Observation: Kitchen door to the patio was open. Screen door installed after the last inspection had been removed.
Corrective Action(s): Kitchen door must be kept close at all time to prevent pest entry. Alternatively, re-install the screen door.

Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher unable to consistently register more than 71C at the plate level during the final rinse cycle.
2. Glass washer dispensed 0 ppm iodine at the plate level.
3. Sanitizer dispenser unable to dispense 200-400 ppm quats sanitizer.
Corrective Action(s): Service / fix all aforementioned malfunctioning equipment: Correct during the inspection.
1. Dishwasher must consistently register 71C or above at the plate level during final rinse cycle.
2. Glass washer must be able to dispense 12.5 ppm or more iodine.
3. Sanitizer dispenser must be able to dispense 200-400 ppm quats sanitizer.
