Corrective Action(s): Ensure each area is supplied with its own sanitizer bottle/pail and 200 ppm Quats.

Observation (CORRECTED DURING INSPECTION): Hand sink in back area (next to dishwashing sinks) was missing liquid soap.
Corrective Action(s): Refill soap dispenser. Ensure staff are checking for soap and paper towel supply throughout the day.

Corrective Action(s): - Ensure deep cleaning is done, and ensure all equipment is thoroughly cleaned and sanitized.

- Contact your pest control company for servicing for flies as needed.

Observation: Floors require deep cleaning in some areas. Many display/sliding glass door refrigerator door seals have accumulation of food debris, and undercounter cooler door handles were noted to be greasy.
Corrective Action(s): 1) Ensure deep cleaning of floors in all hard-to-reach areas occurs at last once a week.
2) Clean and sanitize insides and seals of all coolers at least once a week.
3) Clean and sanitize cooler door handles and all high-touch surfaces throughout each day.

- Front hand sink was properly supplied with hot and cold running water, liquid soap, and paper towels. *Ensure all hand sinks are properly equipped - see violation code 401 above.
- Quats sanitizer solution available at three-compartment sink and from dispenser at 200 ppm. Test strips available for use. *Ensure sanitizer is available for use in each area. See violation code 302 above.
- Walk-in freezer measured at -18C or colder.
- 2-door cooler, display cooler, and self-serve display cooler measured at 4C or colder. Temperature logs well-maintained and up to date.
- Dishwasher reached 71C at the dish surface during final rinse.
- Three-compartment sink available and maintained in sanitary conditions.
- Food storage practices satisfactory.
- Pest control is in place, however fly activity noted in this department. See violation code 304 above.
- General sanitation in this department could be improved, see violation code 306 above.
