Observation (CORRECTED DURING INSPECTION): Food sanitizer spray bottle measured with 0 ppm quaternary ammonium sanitizer. After verifying the stock bottle, it was noticed that operator was using rinse-aid as a sanitizer. Quaternary ammonium sanitizer stock bottle found at the dry storage area.
Corrective Action(s): Mix 2 mL of quaternary ammonium solution with 1 liter of water to produce 200 ppm quats sanitizer. Clean and sanitize all food contact surfaces in the kitchen. Food sanitizer must be available and being used during operation.

Observation: 1. Food containers with food were not covered inside the sandwich coolers.
2. Chemicals were stored on top of dry flour at the dry storage area.
Corrective Action(s): 1. Cover the food container with a food-grade barrier such as saran wrap. Do not leave food not covered during storage.
2. Oranganize the dry storage area to ensure food is stored away from chemicals. This is to prevent potential contamination of food. Correct by: today

- Coolers (sandwich, walk-in, display) maintained at 4C or less.
- Stand-up freezers functional.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 78C at plate level.
- Dough mixer maintained in sanitary condition.
- No pest activities observed at the time.
- General sanitation needs improvement.
- Staff to email a copy of FOODSAFE Level 1 certificate to the Environmental Health Officer.
