Observation (CORRECTED DURING INSPECTION): Sweet Corn buns are a potentially hazardous food item unless can be proven otherwise by corporate office (product testing would be required for pH and water activity). These items require time tracking with other potentially hazardous food items if they are to be stored at room temperature.
This product has not been time tracked in the past.

Corrective Action(s): Sweet Corn buns are able to be sold until 3:30 pm today at which point they must be discarded (as per the other time tracked food items' procedures)
Please ensure going forward any other potentially hazardous food item (those food items that would be able to support bacterial growth at room temperature) are either stored in cooler, stored in freezer or time tracked with other food items.

COMMENTS:
- Facility in EXCELLENT sanitary condition
- No evidence of pests
- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Two sink plugs available for use
- Sanitizer solution in use throughout kitchen food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Bleach available on site for washing of all utensils

NOTE - Time recording for potentially hazardous food items is occurring. Facility is properly recording times and amounts that have been discarded and even items that have "sold out" - EXCELLENT WORK - Failure to follow the plan exactly will result in the plan being Ceased Immediately.
