Observation: Cut, bagged tortilla segments stored in metal uncovered containers in chewable plastic bags.
Box of bagged croutons open in dry storage area.

Corrective Action(s): Ensure all open food containers are in pest proof containers with lid. Rodents can chew through plastic bags.

Observation: Clean dry storage shelves in dry storage area and floor under crouton storage as some croutons have fallen

Observation: Fish cooler not in good working condition. Upper insert portion lid is not tight fitting and hinge appears to be broken. Bottom drawer does not close properly.

Saute cooler has broken handle. This item was discussed at previous inspection.

Corrective Action(s): If the cooler does not close properly this can impact the internal temperature of the cooler unit and may negatively impact the motor resulting in the cooler increasing in temperature greater than 4 degrees Celsius - REPAIR / REPLACE THE FISH COOLER

COMMENTS
- Facility in EXCELLENT sanitary condition
- "Red's Reset" ensures all cleaning of surfaces and food contact surfaces (including tongs) occurs at two hour intervals
- No evidence of pests - pest reports indicate no activity, Health Inspector could not find evidence of rodents in traps or previously high activity areas - EXCELLENT!!
- Pest control program in place - an adequate number of traps for facility and all holes appear to be sealed
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm chlorine at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Ice machine and scoops in good sanitary condition
- Raw meat stored away from Ready to Eat food items

- Bar area beverage dispensers in good sanitary condition; alcohol bottles capped overnight
- Bar ice cream dispensing unit at temperatures of less than or equal to 4 degrees Celsius
