Follow up inspection:
-Handsink was accessible for handwashing and properly supplied with liquid soap, hot and cold running water, and single-use paper towels.
-2-compartment sink was accessible for manual ware-washing. It was reviewed to wash and rinse food contact surfaces (e.g. scoops and candy storage containers) in the first compartment sink, and then sanitize this equipment in 100 ppm chlorine sanitizer in the second compartment sink before air drying it.
-Operator had obtained a steam mop (that does not require a mop bucket). Steam mop was available at the food premises that had detachable wiping cloth ends that can be laundered/cleaned off-site.
-Operator informed that if their other mop with the bucket is used on certain days where the floor requires a deeper cleaning, they would not dispose the waste-water into the designated ware-washing 2-compartment sink or handwashing sink at the food premises, but they would appropriately dispose of it off-site.
