Observation (CORRECTED DURING INSPECTION): Multiple trays of sweet & sour pork and mushrooms being cooled improperly in large voluminous containers and taking up most of the food preparation areas.

An ice bath was being used for cooling the sweet and sour pork
Corrective Action(s): Cool foods properly:

Step 1: 60 deg C to 20 deg C within 2 hours
for solid foods store on wide shallow trays 1 to 3" thick
Step 2: 20 deg C to 4 deg C within 4 hours
for solid foods transfer to refrigerator

Operator is to obtain a speed rack to efficiently cool solid foods and not take up food preparation spaces

-dishpit area is crowded with dishware and equipment and not efficiently used

All food contact surfaces must be easily cleanable, smooth, non-absorbent, non-toxic and light coloured.

-Remove the stainless steel preparation table from the dishpit area and replace it with a multi-tiered shelf for better organization and efficient use of the space
