Corrective Action(s): Clean and organize entire facility. Pul all items away from the walls - clean behind/under equipment, shelves, along walls, spills on walls, inside refrigeration/freezer units, storage containers soiled, etc. Organize shelving. Remove all unused items.

Comments

- Temperature Control: Monitoring required.
- Manual Dishwashing: Sign is required to be posted at dish sink. Staff training required. Bleach on site.
- Ensure "ALL" food contact surfaces are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours)
- Wiping cloth storage discussed. Limit the quantity of cloths being used. Ensure cloths are being stored,completely submerged, in a sanitizer at all times. Monitor/change solution routinely.
- Food Storage: Food/ingredients are to be kept stored in covered, food grade containers.
- Sanitary Facilities: Ok.
- Chemical Storage: All items are to be kept stored away from food items. Designate an area.
- Sanitation: Refer to Violation Notes. Staff cleaning schedules are required to be established and followed.
