Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods in the pizza prep cooler were at 13C. Cooler was turned off accidentally at closing time yesterday. Foods have been stored in the cooler for approximately 7 hours.
Corrective Action(s): Potentially hazardous foods must be maintained at/or below 4C on a consistent basis to prevent the growth of pathogens and/or the formation of toxins. Food items were discarded at the time of inspection.
Four medium inserts of meat/paneer.
Three small inserts of marinated meat/paneer.
One small insert of garlic butter.
One container of pizza meats.
One insert of cheese from the previous night.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottles did not have any bleach concentration in the spray nozzle, but was found to have between 50ppm to 100ppm bleach in the sanitizer bottle - this indicates staff are not regularly using the bleach, allowing it to evaporate.
Corrective Action(s): Food contact surfaces must be sanitized on a regular basis to prevent the growth of pathogens and/or potential cross contamination. Ensure bleach is changed regularly and maintained between 100ppm to 200ppm.

Observation (CORRECTED DURING INSPECTION): Handwash station did not have single use paper towels.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Single use paper towels were replaced at the time of inspection.

Observation: Rodent droppings were found in the storage area under the handwash station (converted from a washroom to a storage area).
Corrective Action(s): Clean and sanitize areas affected by rodent droppings and monitor for pests. Contact you pest control operator if conditions persist or do not improve.

Observation: Staff stated customers are able to dine in and customers were observed dining in at the time of inspection and washroom access has been blocked off. Facility currently has three tables and twelve seats in the dining area.
Corrective Action(s): If dine in service is provided, customers must have access to washroom facilities. Either provide access to the washroom or place signage indicating no dine in and remove majority of seating.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom) after it was turned on and allowed to run properly.
-Bar cooler is used for storage of non potentially hazardous foods.
-Upright freezers were both at -18C.
-Chest freezer is no longer being used.
-Temperatures are checked and recorded daily.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface during the final rinse (minimum of 50ppm required for proper sanitizing).
-Facility is serviced by a professional pest control operator.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until October 11, 2028.
*Facility is currently not selling pizza by the slice in the front area. If pizza by the slice is sold in the front area, handwash station must have hot AND cold running water, liquid hand soap, and single use paper towels.
