209 - Food not protected from contamination [s. 12(a)] Observation (CORRECTED DURING INSPECTION): Raw chicken being prepped on a cutting board next to cooked bacon and containers of lettuce. Corrective Action(s): Ensure that prep area is thoroughly cleaned and sanitized prior to placing cooked and ready to eat items there. Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Floors under equipment and in walk in cooler have a build up of debris. Line coolers require cleaning to remove food debris and standing water. Corrective Action(s): Thoroughly clean and maintain these areas. Violation Score: 9

Line cooler drawers, walk in cooler and line coolers are maintaining foods at 4 degrees C or colder. Walk in freezer is -18 degrees C or colder. Dishwasher final rinse reached 71 degrees C at the plate surface. Sanitizer measured more than 200 PPM chlorine residual. Maintain sanitizer at 100 PPM chlorine residual. 1 capful bleach to every 4 litres of water. Weather stripping at back door needs adjusting or replacing to prevent entrance of pests. No sign of pests at time of inspection. Bar fridge is currently 8 degrees C. Monitor carefully to ensure it returns to 4 degrees C. If not on defrost repair or adjust and remove dairy to another fridge.
