Observation (CORRECTED DURING INSPECTION): Bleach spray bottle was too strong and resulted in the test strip bleach out. Solution was observed to have a yellow tint indicating a high chlorine concentration.
Corrective Action(s): Bleach sanitizing solution at 100ppm to 200ppm is required for proper sanitizing of equipment and food contact surfaces. Concentrations in excess of 200ppm may be toxic for human health. Bleach was diluted to 200ppm at the time of inspection.

Observation (CORRECTED DURING INSPECTION): 5 containers of falafel mix was found in unlabelled containers. Operator stated item is supplied by a person making food from home.
Corrective Action(s): All foods must come from approved sources to ensure their safety. Items were removed from the store area at the time of inspection.

Observation: 1) Bulk dispensing area scoops were stored inside the food container and not in the designated scoop storage area.
2) Fly paper was located directly above food preparation areas.
3) Dry ingredient bags were located on the floor.
Corrective Action(s): 1) Ensure bulk food scoops are stored in a sanitary manner to prevent potential contamination of ingredients.
2) Do not place fly tape above any areas where food is prepared or stored or above food equipment, food contact surfaces, or food storage materials to prevent potential contamination of food, equipment, or utensils.
3) Ensure dry ingredients are properly stored off the floor to protect foods from potential contamination.

Observation: Bleach solution was stored in a bottle labelled window cleaner and contains ammonia.

Comments

-Walk-in coolers were at 3C and 1C.
-Meat display cooler was at 4C.
-Front customer area coolers were both less than 4C.
-Front customer area freezers were both at -18C.
-Cleaning and sanitizing carried out in the 2 compartment sink. Sink plug and bleach available.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat slicer, meat saw, and meat grinder sanitized every 4 hours throughout the day and disassembled for cleaning and sanitizing at the end of the night.
-General sanitation satisfactory at the time of inspection.
-Prepackaged foods within their best before dates and in good condition.
-Washroom clean and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
