205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 3 x 22L of gulab jamun / rasgulla were present inside the stainless steel stand-up cooler at an internal temperature of 9C.
Corrective Action(s): Aforementioned desserts discarded at time of inspection. All potentially hazardous foods must be stored at 4C or less to prevent the growth of bacteria and/or production of their toxins. Do not use the stand-up cooler until a follow-up has been conducted by the Environmental Health Officer.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Bleach santizing pail in front-of-house did not have any chlorine residual. Sanitizing pail at back-of-house had only ~50 ppm chlorine residual.
2. One knife was lodged underneath equipment, and the tip was visibly soiled.
Corrective Action(s): 1. Both sanitizing pails replenished with 200 ppm chlorine residual.
2. Knife was cleaned and sanitized at time of inspection in the dishwasher. Do not wedge knives underneath equipment - this is an unsanitary practice and must stop.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towels inside the hand wash station at the front-of-house.
Corrective Action(s): Paper towels were replaced at time of inspection. You must ensure that employees adequately wash their hands FIRST before working in the kitchen, after contaminating their hands, after going to the toilet / taking a smoke break, etc. This includes checking that the paper towel dispenser is adequately stocked with paper towels.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Raw chicken stored directly next to, and on top of, cooked chicken. Lids on raw chicken containers were loose / misplaced.
2. Grocery bags (of an unknown origin) used to store products inside the walk-in freezer.
Corrective Action(s): 1. All raw items were moved to one shelf, with cooked items on the shelf at the opposite side. As previously stated, NEVER store raw items next to cooked items as this can and will result in direct contamination of food. Raw juices contain harmful bacteria - when your customers eat cooked food with this bacteria, they can get ill!
2. Replace the grocery bags with food-grade bags (e.g. freezer bags). Do not use grocery bags.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Oily woks and grease were noted at the back of the kitchen behind the tandoori oven. Furthermore, the area surrounding the walk-in freezer is in poor sanitary condition, with mould-like growths around the door-frame. Part of the wall adjacent to the door-frame is breaking apart and must be repaired.
Corrective Action(s): 1. Repair the wall surrounding the walk-in freezer.
2. Oily woks and grease was removed from the shelving at the back of the kitchen.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Stand-up stainless steel cooler (desserts) at 11C.
Corrective Action(s): Repair or adjust the cooler so that it reaches, and maintains, a temperature of 4C or less. Do not use this cooler until the Environmental Health Officer arrives for a follow-up to confirm that it is at 4C or less.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Owner was absent at beginning of inspection. No one had FoodSafe 1 or equivalent.
Corrective Action(s): At least one person must have FoodSafe 1 at all times when the owner is absent. One additinoal person is to take FoodSafe 1.

Comments

Routine inspection conducted. Although parts of the kitchen are in improved sanitary condition, improvements still need to be made to general food handling:

1. Temperatures
- Walk-in cooler at 3C
- Walk-in freezer at -18C
- Front sweets cooler no longer holds perishable items or potentially hazardous foods
- Both prep coolers were at 4C or less (top and bottom). REMINDER: Double stacking is not permitted
- Buffet items are hot-held at 60C or greater - excellent. Salads and sauces are stored on ice at 4C or less - good
- Gulab jamun / rasgulla cooler at 11C (see violation code above)
- Coolers adequately stocked with thermometers
- Temperature logs are up-to-date

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in restrooms and buffet hand sink. Kitchen hand wash station was lacking a paper towel dispenser
- Low-temperature dishwasher inside main kitchen and in buffet area releases 100 ppm chlorine residual at the plate
- Ventilation canopy in satisfactory sanitary condition
- Area behind cook line is in improved sanitary condition compared to previous inspections

3. Storage
- Food is elevated 6" off the floor
- Flour and dry storage products stored inside food bins

4. Pests
- Last check by professional pest control company was on August 27, 2019. No signs of rodent activity were observed by the pest control technician. Ensure that you obtain a REPORT from the technician each time he arrives so that records may be kept
- No signs of recent, visible pest activity at time of inspection - good

5. Administrative
- Permit posted
- Operator has FoodSafe 1 (Expiry: April 2024)
