Comments

Site visited as no invoice for cooler/dishwasher repair emailed to the health inspector.

-Main prep cooler repaired and not operating <4'C. Good.
-High temperature dishwasher repaired. Invoice provided. However, the minimum temperature for final rinse was still not achieved. 70.9'C was the highest temperature achieved at the plate level after final rinse and then decreased back to 70'C. Contacted the technician and confirmed his visit yesterday. Technician to come again today. OK.

NOTE: Until the dishwasher is repaired, continue to follow manual dishwashing method properly as discussed at this time.
NOTE: DO NOT store any potentially hazardous food in the small prep cooler until repaired.
