Observation (CORRECTED DURING INSPECTION): 1. Low temperature dishwasher dispensed 0 ppm bleach sanitizer at the plate level. Sanitizer solution line was observed to be empty and stock bottle had small amount of solution left.
2. Bleach sanitizer in spray bottle measured at 0 ppm in concentration.
3. Quats sanitizer spray bottle at the bar area measured with 0 ppm quats. Solution appeared orange in color.
Corrective Action(s): 1. Operator replace the stock solution bottle and primed the line with bleach sanitizer. 100 ppm bleach sanitizer was measured at plate level. Wash and sanitize all plates used today through the dishwasher again.
2. Staff refilled the bleach sanitizer spray bottle with 100 ppm bleach sanitizer.
3. Staff refilled the quats sanitizer spray bottle with 200 ppm quats sanitizer.

Observation (CORRECTED DURING INSPECTION): Staff washroom hand washing station did not have liquid hand soap available.
Corrective Action(s): Refill the liquid hand soap dispenser with liquid hand soap. Hand soap is required for staff to properly wash their hands.

Observation: 1. Plastic bowl was used as a scoop for flour and left inside the flour bag.
2. Raw marinated chicken in metal tray was store on top of avocados inside the walk-in cooler.
Corrective Action(s): 1. Remove the plastic bowl and do not use it to scoop out food.
2. Raw proteins must be stored on the lowest shelves and away from ready to eat food, fruits and vegetables. Rearrange the storage layout inside the walk-in cooler. Correct by: today.
