Observation (CORRECTED DURING INSPECTION): Upright hot holding unit/warmer located behind preparation table contained potentially hazardous food that had internal temperatures ranging from 36 to 51 degrees C. It was stated by staff that food was cooked at approximately 12:00 PM, and had been in the hot holding unit/warmer for over two hours. Unable to verify temperatures based on incomplete hot holding logs. Note: Hot holding unit/warmer temperature gauge displayed 123 degrees F (51 degrees C) at time of inspection.
Corrective Action(s): The following potentially hazardous food items were discarded by staff/management. Note: Food items were stored in metal food insert trays.
- 2 inserts of white fish
- 2 inserts of pork meat balls
- 1 insert of BBQ pork
Hot holding requirements discussed with management on site.

Observation (CORRECTED DURING INSPECTION): Four cans of food that were severely dented (and dented near the seal) were observed in the dry storage area for canned food.
Corrective Action(s): Cans discarded by staff. Ensure cans that are badly dented and/or dented near the seal are either discarded or set aside in a designated area to be returned to the supplier as the inner protective lining of the can may be compromised.

Staff hair restrained and hair nets in use.
General sanitation excellent. No signs of pest activity observed during inspection.
Temperature logs available for cold holding units and cooking internal temperature checks. Hot holding logs are incomplete or limited.
