Observation (CORRECTED DURING INSPECTION): Cooked meat observed to be on stove top without burner on. Internal temperatures of potentially hazardous meat items found to be at 35 degrees Celsius.
Cooked meat found to be temporarily stored in insert at temperatures of less than 60 degrees Celsius. Internal temperatures of 30 degrees Celsius observed.
CORRECTED DURING INSPECTION - Items recooked on stove top and hot held on stove top.

Corrective Action(s): Ensure food items are not left sitting at room temperature and outside of designated hot holding units.
If food is to remain on stove top the burner must be on such that internal temperatures of greater than or equal to 60 degrees Celsius are maintained.

Observation: Third compartment sink full of dirty dishes and not full of sanitizer solution upon arrival of EHO.
This has been discussed with operator during prior inspections.
Facility missing one sink plug.

Corrective Action(s): Facility needs dishwasher. Dishwasher is on site and requires a part. Owner stated dishwasher will take 2 weeks for installation.
Facility is too large to operate without dishwasher and staff are not able to keep third compartment filled with sanitizer solution at all times which was discussed during opening inspection.
Replace missing sink plug. Purchase extras.

Back kitchen sink hand sink is not accessible by staff.

Corrective Action(s): Clean and sanitize floors.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect floor and wall junctions throughout to ensure no holes in wall. Inspect around any plumbing or electrical to ensure no holes in wall. Seal any holes found with non-chewable materials such as metal or wood. Spray foam insulation is unsuitable as it is chewable and does not permanently seal holes.

Observation: Back door observed to be open at time of inspection. Facility has rodent infestation.

Observation: Floors are in poor condition. Laminate has experienced water damage and is held together with tape and missing in areas.
Faucet in dishwashing area is leaking and not easily usable. Staff explained it is easier to fill jugs from other sinks to fill three compartment sink.

Corrective Action(s): Floors require replacement. Discussed with owner.
Faucet requires replacement. Filling from other sinks is not sustainable. Current faucet is described as "taking too long" to fill sink. If staff are struggling to use faucet it requires replacement. Discussed with Owner. Faucet to be replaced IMMEDIATELY.

***Discussed rearrangement of sinks in back area. Any changes to approved floorplan require FHA approval. Submit floorplan as before for review.
*** NOTE: Ice machine has been removed. Ensure proper cooling of large batch items is occurring. At time of inspection all large containers of cooked meat were at appropriate temperatures.
