302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer concentration in sanitizer sink in meat department tested at 0ppm Quat. Observed that the daily monitoring log sheet recorded 200ppm Quat for today. Bottle containing Quat was observed to be completely empty. Once sink was drained and a new bottle of Quat was installed approx 300ppm Quat concentration was measured.
Deli deparment observed not properly setting up warewashing sinks when carrying out a 3 compartment sink method. This was corrected at time of inspection.
Corrective Action(s): Re sanitize all utensils in the meat department
Ensure staff in all departments are "Educated" on recording accurate concentations and how to properly carry out a 3 compartment sink method.
Ensure staff are "Educated" on how to read concentrations when using Quat test strips to verify minimum concentrations are present
Recommend bottle of sanitizer to be swapped out when the level reaches about 4 cm from the bottom. The remaining Quat can be poured into the new container so that no product is wasted.
Install an automatic quat dispenser at the deli 3 compartment sink

Observation: Gap observed in the weather stripping at the base of the front door large enough to allow the entry of mice. This is an outstanding item listed in my previous report on January 22.
Corrective Action(s): Eliminate gap

Observation: Old meat food splatter observed at the floor/wall interface and wall surfaces in inside the walk in cooler.
Handles to both the walk in cooler and walk in freezer observed with debris accumualtion
Saran wrap unit in meat cutting area observed with old meat splatter accumualtion
Exterior of garbage container in meat cutting area observed with old meat spaltter accumulation
Dust/debris accumualtion observed on the floor inside the outdoor freezer storage unit.
Corrective Action(s): Review your daily sanitizing procedures with meat dept staff as cleaning procedures are not being followed.
Clean flooring in outdoor freezer unit.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 2 green wire rack shelving units inside the meat dept walk in cooler observed to be badly rusted/flaking.This is an outstanding item listed in my report on January 22.
Several milk crates observed inside the meat dept cutting area. These were observed to be heavily impacted with old meat debris accumulation.
Rubber floor mat in meat cutting area observed to be heavily impacted with old meat debris accumulation. The mat cannot be easily cleaned due to the surface being open faceted ie not smooth.
Rubber gasket observed missing on the sanitizing sink in the deli department resulting in the sink not holding water.
Corrective Action(s): Replace both rusted green wire rack shelving units
Remove milk crates as these cannot be easily cleaned and sanitized due to all the openings.
Replace rubber floor mat with a smooth surface mat so that it can easily be cleaned and sanitized.
Replace missing rubber gasket
