3 compartment sink, 200ppm quats dispensed by chemical dispensing system.
Wiping cloths stored in clean 100ppm chlorine sanitizer solution.
Walk in cooler at 3 degrees C.
Walk in freezer at -16 degrees C.
Main preparation area cooler at 4 degrees C. Time stamping system in place.
Hot holding at or above 60 degrees C.
Drive thru area drawer cooler at to below 4 degrees C.
Wall mounted freezer and fry hopper ambient air temperature observed to be ~ -6 degrees C. Monitor and enusre -18 degrees C.
Temperature monitoring records maintained and available for review.
