Observation (CORRECTED DURING INSPECTION): 1. Bulk food scoops were stored inside the bulk food bins. The handles of the scoops are caked in food debris.
2. Rice scoops were stored in room temperature water.
Corrective Action(s): 1. Clean and sanitize all bulk food scoops. Store all bulk food scoops outside in their own dedicated container.
2. Clean and sanitize the rice scoops and container. Discard water and replace with ice water. Replenish ice as needed. Ensure rice scoops and container are cleaned and sanitized at least every 4 hours.

Observation (CORRECTED DURING INSPECTION): Staff states knives are cleaned and sanitized at the end of the day.
Corrective Action(s): All food contact surfaces (knives, cutting boards, prep tables, etc.) must be cleaned and sanitized at least once every 4 hours.

2. Raw meats were stored above vegetables and other ready to eat foods in the walk-in cooler.
3. Food was stored nearby the hand washing station at the kitchen prep table.
4. Opened cans of food observed inside prep cooler.
5. Bag of rice in dry storage room was left unsealed
Corrective Action(s): 1. Cover all food containers with tight fitting lid or plastic wrap.
2. Organize all food so raw meats are stored separately or below vegetables and ready to eat foods.
3. Remove the food. Do not store any food near hand washing stations to avoid potential contamination.
4. Transfer leftover canned food to a food grade container.
5. Seal bag of rice.
