Produce cooler was reading at 3C at time of inspection. Display thermometer in place.
Remember to have staffs monitor refrigeration units on a daily basis to ensure that units are operating at adequate temperatures.
Wooden ladle (exposed wood) for stirring soup stock has been removed. The remaining wooden ladle is smooth and metal one is available as well.
No rice being left at room temperature at time of inspection.
Reminder to keep rice spatula stored in ice water bath. Directed staff to fill ice.
Ice machine has been cleaned and maintained.
Water leak no longer detected in men's washroom.
Wiping clothes submerged in 100ppm bleach sanitizer.
1.5 cooked eggs observed to be stored on hot plate for warming. Discussed that this procedure is acceptable given that eggs are only taken out from cooler to warm before serve.
->Do not leave the cooked eggs on warmer unit for over 2 hours as it cannot maintain at >60C.
No further concerns.
