- Temperature Control: No concerns noted this date. Temperature gauges are to be securely fastened inside all refrigeration units. Monitor all holding temperatures routinely.
- Mechanical Dishwasher: Low Temperature (Chlorine) ~ 100 ppm. Monitor. Test strips on site.
- Wiping cloth storage discussed. (Sanitizer: 1/2 tsp bleach per litre of water.)
- Food/Chemical Storage : Ok. Previously discussed: Storage shelving is to be kept smooth, tight and impervious to moisture. ie: painted wood.
- Sanitary Facilities: Ok.
- Staff Hygiene: Ensure all staff wash hands routinely. (ie: Money handling) Glove use discussed. No bare hand contact with cooked - ready to eat foods permitted.
- Sanitation: Discussed. Cleaning of all surfaces are to be conducted routinely. (ie: Hard to reach areas - shelves, behind and under equipment, grinders, etc.)
- Pest Control: Monitoring to be conducted. No signs noted this date.
- Garbage/Recycling/Composting Storage: All items to be stored in covered, rodent proof containers.

Facility is to be kept clean and organized.
