Observation (CORRECTED DURING INSPECTION): Observed multiple sauces being reheated in the hot-holding unit, which had not been warmed-up yet (water temp 27 Celsius).
Corrective Action(s): Employee removed the sauces form the hot-holding unit and placed them on the cooktop for reheating.
*Hot-hold units must not be used to reheat foods because they don't heat foods quickly enough and they may not reheat the foods to sufficient temperature (ie. 74 Celsius).
