Observation (CORRECTED DURING INSPECTION): Washed metal insert was found to have dried food on it.
Corrective Action(s): Ensure all equipment is properly washed and sanitized after each use to prevent potential contamination of foods. Insert was washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Inserts of food were double stacked on top of one another without a physical barrier between the inserts.

Comments

-Glass door upright cooler was at 4C.
-Double door cooler was at 2C.
-Upright cooler by the 3-compartment sink was at 4C.
-Upright cooler by the hot holding cabinet was at 4C.
-Under counter cooler was at 1C.
-Chest freezers (three in total) ranged from -21C to -24C.
-Hot holding cabinet was recently serviced and was greater than 60C. Hot holding of gravy was greater than 60C.
-Cooked foods properly cooled in the chest freezer. Chicken made the previous night was at 4C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach sanitizer was at 100ppm.
-Sanitizer pails (three in total) properly labelled and tested at 200ppm. Operator has increased sanitation of common touch surfaces.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff member observed practicing good hand washing and single use glove practices.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered. Raw chicken stored below ready-to-eat foods.
-General sanitation good at the time on inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Staff FOODSAFE Level 1 valid until May 18, 2024.
