General organization and cleanliness is pretty good. Make sure staff look and clean under shelves in walk-in cooler. Some food debris noted. Handwash stations good. cooling units all less than 4 C. Freezer below -18 C. Poultry cooler well organized and pretty clean. Quats dispensing at 200 ppm at both sinks. Spray bottles at 200 ppm quats as well. **Discussed future of under counter cabinets.
