Observation (CORRECTED DURING INSPECTION): Fried chicken in hot holding case measured at 53C. Chicken was moved to another section of hot holding case measured to be at 64C at time of inspection. Staff stated chicken was deep fried under an hour ago.
Corrective Action(s): Hot held food items must be held at 60C or hotter. Corrected during inspection.

Observation (CORRECTED DURING INSPECTION): Staff washroom in back area was supplied with bar soap instead of liquid soap.
Corrective Action(s): Discontinue use of bar soap. Refill soap dispenser with single-use, liquid soap.

Observation: Condenser panel of ice machine was mouldy.
Corrective Action(s): Discard all ice in the ice machine. Clean and sanitize all parts of the ice machine, and do so on a regular basis.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Bulb above one section of hot holding case was not working, this section of hot holding case was measured to be between 46C and 53C.
2) Walk-in cooler door does not close securely.
Corrective Action(s): 1) Replace bulb/repair hot holding case. All hot food must be held at 60C or hotter. Do not place food under this section of the hot holding case until it has been repaired.
2) Repair walk-in cooler door such that the door closes tightly.

- Walk-in cooler and two undercounter coolers were measured at 4C or colder

- Bleach sanitizer solution available in bucket at 200 ppm (chlorine)
- Organization in back storage area satisfactory
- Ice cream machine cleaned and sanitized weekly
- UV fly light located above garbage can in food prep area - OK.
