Observation: Foods in the walk-in cooler measured 6C throughout inspection. Temperatures taken this morning state that the walk-in cooler was 37F.

Technician has been called and is expected to arrive within the hour.
Corrective Action(s):
The walk-in cooler must be repaired so that it is able to achieve and maintain 4C/40F.

If the technician cannot repair the cooler:
- All potentially hazardous foods must be discarded.

A time-stamped receipt, describing the type of work done, from the technician must be provided at the follow-up inspection or all foods in the walk-in cooler will be discarded.

Observation (CORRECTED DURING INSPECTION): Hot held soup measured approximately 50C at the time of inspection.
Corrective Action(s): Warmer was accidentally not turned on. Soups re-heated to 74C before being placed back in hot holding unit.

Observation (CORRECTED DURING INSPECTION): Quat sanitizer bucket measured 50ppm.
Corrective Action(s): New quat solution was made up at the time of inspection, measuring 200ppm. Please be aware that the line for the sanitizer can get an air bubble in the tubing; ensure that the solution is tested with test strips.
