Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher rinse is below 71 degC. Operator hasn't converted dw to a low temperature dishwasher as planned.
Correction: Get the machine serviced. Until then wash the dishes in the dishwasher and soak in the sink using 1 tsp bleach per L water for at least 2 minutes before airdrying.
Comments

On Follow-Up:
Dishwasher rinse is 81 degC at plate level. Operator also has the dw hooked up to a sanitizer just incase.
There's hot water at the taps.
Shelving across from the stoves have been removed. There is a prep counter there now. More prep counter space has been made available beside the display cooler.
Operator is currently only doing take-out until further notice.

Outstanding Items:
Install a larger hot water tank. As per operator, the current tank is 17.1 ga. He's installing another 40-50ga tank alongside the current tank so that they don't keep running out of hot water.
Another handsink will be installed in the waitress station. Until then, you may not serve/dispense food in this section. The miso soup has been moved inside the kitchen for dispensing.
Install a paper towel dispenser at the 3-compartment sink.
Submit a revised floor plan outlining the new hot water tank, handsink, prep space, and changes in the handsink and prep sink location in the front.

Another follow-up to be conducted on March 17. Ensure all the outstanding items are completed by then. Call me for an inspection if you're ready before March 17.
