Observation (CORRECTED DURING INSPECTION): In-use utensils were stored in water at room temperature (measured to be at 18C).
Corrective Action(s): Discontinue this practice. Store in-use utensils in ice water, and wash and sanitize every 2 hours.

Observation (CORRECTED DURING INSPECTION): Hand sink in main kitchen area was missing soap and paper towels.
Corrective Action(s): All hand sinks must always be properly stocked with liquid soap and paper towels.

Observation (CORRECTED DURING INSPECTION): No soap or paper towel at kitchen hand sink.
Corrective Action(s): For proper hand washing, liquid soap and paper towels must be used.

Observation: The following areas require cleaning and sanitizing:
- Ventilation canopy (right half)
- Floors under deep fryer
- All dry ingredient bins and lids
- Interior of pizza prep cooler
Corrective Action(s): Clean and sanitize all areas noted above, and do so on a regular basis (once a week).

Observation: Ventilation canopy was turned off again at time of inspection.
Corrective Action(s): As previously discussed, ventilation canopy must be on during all hours of operation.

Comments

- Hand sink in front area was supplied with liquid soap and paper towels.
- Bleach sanitizer solution available at 200 ppm
- High-temperature dishwasher reached 71C at dish surface during rinse cycle - good
- All coolers were maintaining temperatures of 4C or colder
- All freezers were maintaining temperatures of -18C or colder
- Coolers were equipped with thermometers
- Dough machine in use - ensure to clean and sanitize dough machine after each use.
- Food storage practices satisfactory. Ensure all food items in prep coolers are properly covered.
