Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 70C at plate level after 3 runs. A minimum temperature of 71C is required to properly sanitize utensils and plates.
Corrective Action(s): Manually sanitize all utensil and plates at the 3 compartment sink. Set up the sink for manual dishwashing.
