-Coolers were at an acceptable termperature (4C or colder)

-Reviewed procedures for self serve olive and antipasti area with Team Leader for Specialty area. Spoons are replaced every 3 hours, temperatures checked, and product stirred to maintain cold temperature throughout product.
-High temperature dishwasher met sanitizing temperature requirement. Final rinse was 75C measured with min/max thermometer.
