Kitchen monitoring logs being maintained
All kitchen cold holding equipment cold holding at <4c
Dishwasher at 73c (At plate level). Soap dispensed into wash cycle
Liquid soap and paper towels provided at kitchen hand sink
Glasswasher at 15ppm iodine in final rinse. Soap dispensed in to wash tank. Wash tank at 130F
**Use saran wrap to make a tight seal around the top of the iodine container.
Ice machine is being maintained.
**Write in the actual approximate concentration of the iodine concentration in the daily log. Writing in "OK" is not acceptable
Wash rags submerged in bleach. Concentration tested at approximate 200ppm. Ensure solution is changed a minimum of every 2 hours.
