Observation (CORRECTED DURING INSPECTION): Garlic butter in large container stored at room temperature at the bar. It is made in house from natural products.
Corrective Action(s): This is a perishable item and needs to be temperature controlled, otherwise only take out small portions that will be used within 2 hours. Any leftovers after the 2 hours must be discarded.

Observation (CORRECTED DURING INSPECTION): -High temperature washer not getting hot enough -rinse temperature at thermostat is much less then the 180 deg F minimum -at plate level shows 60 deg C -operator called a serviceman coming later today

-Reused wiping towels for food contact surfaces left on counters
Corrective Action(s): -Have your washer serviced today. All dishware, utensils including clean must be rewashed once repaired.

-Keep your wiping towels in sanitizer buckets when not actively used (will significantly reduce bacterial levels)

Observation (CORRECTED DURING INSPECTION): A number of food workers are using waist towels to dry their hands.

Observation: A number of personal worker cups observed in the kitchen areas.
Corrective Action(s): No eating/drinking is allowed in the kitchen due to the salival transfer that occurs -remove all personal cups from the kitchen

Observation: A number of foods stored directly on the floor in the dry storage room. Some open bulk foods not properly protected.
Corrective Action(s): Foods should be maintained off the floor >15cm on risers or shelves

-A shatter shield is missing at a light panel in the dishpit area

-High temperature washer is not reaching minimum rinse temperatures -3 cycles tested at 58 to 60 deg C at plate level and thermostat for rinse cycle showing less then the 180 deg F minimum
Corrective Action(s): -Have Walk-in cooler serviced -fridge temperatures must maintain foods at or below 4 deg C

-Replace missing shatter shield

General Sanitation

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
