Observation (CORRECTED DURING INSPECTION): Sanitize step was not being performed for large equipment that cannot fit inside the dishwasher.
Corrective Action(s): Follow the manual dishwashing procedure as per the sign provided. Wash with detergent, rinse with water, sanitize with a food contact surface sanitizer (200 ppm Quat), and air dry.

- Hot holding case was not in use at the time of inspection. Ensure it is able to maintain foods ≥ 60°C.
- High temperature dishwasher is available. Final rinse temperature reached ≥ 71°C.
- Three compartment sink is available for manual dishwashing
- 200 ppm Quat sanitizer is available
- Dry storage areas are maintained
- No signs of pests observed
