Observation: Three tin cat pest monitoring stations were found to have cockroaches with various life cycles. Facility is currently serviced by pest control operator on a monthly basis.
Corrective Action(s): Contact your pest control operator to determine the cause of the infestation and to treat the facility to prevent further infestation. Ensure all food contact surfaces are sanitized at the start of the day prior to any food preparation.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -11C.
-Prep cooler was at 4C (top and bottom).
-Front display cooler was at 4C.
-Upright cooler/freezer was at 4C/-13C.
-Hot holding cabinet was greater than 60C prior to putting cooked chicken in the unit. Chicken was cooked to greater than 74C.
-Cooked foods from the previous day were properly cooled to 4C.
-High temperature dishwasher had a final rinse temperature of 77C on the dish surface during the final rinse cycle (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm.
-Quats sanitizer pails were properly labelled and tested at 200ppm. Containers are labelled with a 2hr time stamp to verify sanitizer is changed every 2 hours.
-Potato dicer was found to be in good sanitary condition.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination. Raw meats stored separately from ready-to-eat foods.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and air dryer.
-FOODSAFE Level 1 valid until August 19, 2026.
