Observation (CORRECTED DURING INSPECTION): 1. No surface sanitizer prepared. Wiping cloths stored on counters.
2. Person in charge unable to describe proper manual warewashing method. Soap, bleach, and food debris present in third compartment where it was stated that utensils are sanitized. Person in charge stated utensils are rinsed after sanitizing.
Corrective Action(s): 1. Surface sanitizer prepared at 100 ppm chlorine. Please ensure that surface sanitizer is available at all times. Wiping cloths are to be stored in sanitizer.
2. Three compartment sink was set up for manual warewashing at time of inspection with bleach sanitizer at 100 ppm. Please ensure that after utensils are washed and rinsed, they are fully immersed in sanitizing solution (e.g. bleach solution at 100 to 200 ppm) for at least 2 minutes. Allow to air dry after sanitizing.

Observation (CORRECTED DURING INSPECTION): Ice scoop stored inside of ice machine. Ice scoop was removed at time of inspection. Please ensure that ice scoop is stored in a sanitary manner outside of the ice machine to protect ice from potential contamination.

- Hot holding internal temperatures (soup, rice) at 60 degrees C or more
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- No evidence of pest activity noted

Note: Temperature log is available for February 2018. "High temperature dishwasher rinse" was being checked off and staff on duty were not able to determine which coolers corresponded to "cooler 1, 2, 3..." etc. Please ensure that temperature logs reflect the units that are being checked.
