Observation (CORRECTED DURING INSPECTION): Berries were not covered in the freezer.
Corrective Action(s): Ensure all food items are kept covered in between use to prevent any contaminants (e.g. ice) from falling into them.

304 - Premises not free of pests [s. 26(a)]
Observation: A few rodent droppings were observed in a corner between the handsink and upright cooler and were not observed in any other location at the time of inspection. A pest control program was in place on a monthly basis.
Corrective Action(s): Clean the affected area to remove rodent droppings; Correct today. Monitor for signs of new pest activity (droppings, live/dead rodents, ripped food packaging etc and implement pest control measures (i.e. increase the visits from the pest control company, keep food covered in pest proof containers and 6 inches off the floor, keep the restaurant clean and declutter).

Observation: Black buildup and sugar residue was observed throughout the floor.
Corrective Action(s): Thoroughly clean the floor, corners, and behind equipment to remove the buildup of debris. Correct by October 25, 2016 (Tuesday).

Comments

Liquid soap, hot and cold running water, and paper towels were available at the handsinks.
Coolers were 4 degrees C (40 degrees F) or colder. Refrigeration units were equipped with thermometers.
Upright freezer was -18 degrees C (0 degrees F) or colder.
Temperature records were available.
100 ppm chlorine sanitizer was available in the bucket.
A drain plug was available for the 2-compartment sink. Manual dishwashing procedures were reviewed with the operator.
The ice machine was clean and the scoop was stored separately in a clean container.

Note: Obtain a large enough food grade container with a tight fitting lid for storing open bags of sugar.
