- all coolers <4C
- chest freezer <-18C
- no hot holding at time of inspection
- Quats (in buckets) at 200 ppm. Wiping rags are stored in sanitizer solution
- high temperature dishwasher rinse cycle above 72 degree Celsius at the dish surface
- all food covered and stored at least 6 inches off the floor
- overall cleanliness and maintenance good at the time on inspection
- pest control is in place
